A simple way to quickly make crispy chicken cutlets without any extra fuss.
Ingredients
- 4 chicken fillets
- 3.5 ounces cheese
- 2 tsp mustard seeds
- 1 lemon
- a pinch of salt
- 1/2 tsp thyme
- oil for frying
Preparation
- Heat the oven to 400 degrees Fahrenheit. Line a baking tray with parchment paper.
- Flatten the chicken fillets with the flat side of a meat mallet so that they are roughly 3/4 inch thick. Put the fillets in a bowl, add salt, lemon juice and mix.
- Grate the cheese, put it in a bowl, add mustard grains and mix.
Advice: Use well-matured cheese, such as Emmental.
Heat the oil in a pan, fry the fillets for 2 minutes on each side, without pressing or stirring with a spoon so that the meat doesn’t lose its juiciness.
Put the meat on a plate, sprinkle with thyme, cover with a cheese-mustard mixture and put in the oven for 17-20 minutes until the cheese melts, forming a golden crust.
